Chicken thighs are well suited to the slow cooker. They contain more fat and connective tissue than breasts, so they stay moist during a long cook and become tender enough to pull apart with a fork. They are also usually one of the more affordable cuts, which helps with family budget meal planning.

This guide covers how to choose thighs, how long they take, a basic method, and flavor ideas.

Bone-In or Boneless Thighs?

Either works.

  • Boneless, skinless thighs are the quickest and easiest. They cook faster, shred easily and are simple to portion for meal prep.
  • Bone-in thighs often have more flavor and stay very moist, but they take longer and you need to remove the bones before serving or shredding. Skin on a slow cooker thigh tends to turn soft rather than crisp, so many people remove it before cooking or after.

If you are cooking from frozen, note that food safety guidance generally recommends thawing chicken before it goes in the slow cooker.

How Long Do Chicken Thighs Take in a Slow Cooker?

Times vary by slow cooker, how full it is, and the size of the thighs. As general starting ranges:

Cut Low High
Boneless, skinless thighs about 4 to 6 hours about 2.5 to 3.5 hours
Bone-in thighs about 6 to 8 hours about 3 to 4 hours

Chicken is safe when the thickest part reaches 165°F (74°C). Many cooks let thighs go a little past that point, because the extra time helps the connective tissue soften, and thighs tolerate it better than breasts. If your thighs seem firm or rubbery, they may simply need longer.

Basic Slow Cooker Chicken Thighs

Ingredients

  • 2 to 3 pounds chicken thighs
  • 1 teaspoon salt and 1/2 teaspoon pepper, or to taste
  • 1 teaspoon each garlic powder, onion powder and paprika
  • 1/3 to 1/2 cup chicken broth

Method

  1. Pat the thighs dry and season them on both sides.
  2. Add the broth to the slow cooker, then the chicken. Try to keep the pieces in a single layer or only slightly overlapping.
  3. Cover and cook on low or high, using the timing above.
  4. Check the temperature, then serve the thighs with some of the cooking juices spooned over the top.

Browning the thighs in a skillet first is optional. It adds flavor and color, but it is an extra pan to wash, and many busy cooks skip it.

Flavor Variations

Add the sauce ingredients to the slow cooker with the chicken.

  • Garlic butter: sliced butter, minced garlic, a little broth and Italian seasoning
  • Honey garlic: honey, soy sauce, garlic and a little ketchup or vinegar
  • BBQ: barbecue sauce thinned with a splash of broth or water
  • Salsa chicken: a jar of salsa, with cumin and chili powder
  • Lemon herb: lemon juice, garlic, oregano and thyme
  • Teriyaki: teriyaki sauce, ginger and garlic, served over rice

For sauces with a lot of sugar, such as honey or BBQ, many cooks add part of the sauce at the start and the rest at the end, so the flavor stays bright.

Keeping the Sauce from Being Watery

Chicken releases liquid as it cooks, so slow cooker sauces tend to thin out. A few fixes:

  • Use less liquid at the start than you think you need.
  • Remove the thighs at the end and simmer the juices in a pan for a few minutes.
  • Stir in a cornstarch slurry (about 1 tablespoon cornstarch mixed with 1 tablespoon cold water) and cook on high with the lid off for a few minutes.
  • Leave the lid slightly ajar for the last 30 minutes.

Serving Ideas

  • Over rice, mashed potatoes or buttered noodles
  • With roasted or steamed vegetables
  • Shredded into tacos, wraps or grain bowls (see our shredded chicken in the slow cooker guide for shredding and freezing tips)
  • Sliced over a salad

Meal Prep and Storage

Refrigerate cooked thighs within two hours of finishing. Store them in airtight containers with some of the sauce and plan to eat them within about three to four days. For longer storage, freeze portions in freezer bags with a little sauce, and thaw them in the refrigerator before reheating until steaming hot.

If you like bone-in cuts, our slow cooker chicken drumsticks article is a good next step. They are also inexpensive and work with similar flavors.

Frequently Asked Questions

Can you put raw chicken in a slow cooker? Yes. Thawed raw chicken can go straight in. Check that it reaches 165°F (74°C) in the thickest part.

What is the best method for cooking chicken thighs? For ease and tenderness, the slow cooker is a very good choice. For crisp skin, roasting or air frying works better. You can also finish slow cooker thighs under a broiler for a few minutes to brown the surface. Our guides to air fryer chicken thighs with crispy skin and Instant Pot chicken thighs cover those alternatives.

Can I cook them on high instead of low? Yes, use the shorter time range. Low usually gives slightly more tender results.
