The Short Answer
For a typical 3 to 5 pound corned beef brisket, place it fat side up in the slow cooker, add the spice packet and enough liquid to come about halfway up the meat, and cook covered on low for roughly 8 to 10 hours. Add cabbage near the end. The meat is ready when a fork slides in easily.
Corned beef is a cured brisket, so it differs from a regular roast like the chuck in our slow cooker pot roast, but the same low, moist approach applies.
Flat Cut or Point Cut?
- Flat cut: leaner, more uniform and easier to slice neatly.
- Point cut: a bit fattier and often more tender and flavorful, but less even to slice.
Either works. Flat cut is more common in stores; the point cut is more forgiving if you tend to overcook.
Ingredients
- 1 corned beef brisket (3 to 5 pounds) with its spice packet
- 1 onion, quartered
- A few cloves of garlic
- Carrots and small potatoes
- Water or beef broth (about 2 to 4 cups, depending on the size of the cooker)
- 1 small head of cabbage, cut into wedges
- Optional: bay leaf, whole peppercorns, a splash of vinegar or a little mustard if you have no spice packet
If the brisket has no spice packet, a mix of peppercorns, mustard seed, coriander seed, bay leaf and garlic makes a reasonable substitute.
Method
- Rinse the brisket briefly under cold water and pat dry. Rinsing can reduce surface saltiness.
- Put the onion, garlic, carrots and potatoes in the bottom of the cooker.
- Set the brisket on top, fat side up, and sprinkle on the spices.
- Add liquid.
- Cover and cook on low until fork-tender.
- About 1 to 2 hours before the end, lay the cabbage on top or tuck it around the meat.
- Rest the brisket before slicing.
Does Corned Beef Need to Be in Liquid?
Yes, some. Corned beef is a tougher cut that needs moist heat. Many recipes add enough liquid to reach about halfway up the brisket, or to cover it more fully, and either approach can work. Using water or a mix of water and broth is fine, since the meat itself is already salty. Plain water often gives the best balance.
How Long Does Corned Beef Take?
- Low: about 8 to 10 hours
- High: about 4 to 6 hours
Use these as a rough guide only. Start checking near the earlier end. The brisket should be tender when poked with a fork, but still hold its shape for slicing. If it falls apart completely, it is still tasty, just better for hash or sandwiches.
When to Add Cabbage and Vegetables
Cabbage turns very soft quickly, so adding it for the last hour or two keeps it from disintegrating. Potatoes and carrots hold up better and can go in at the start if cut large, or midway if you prefer them firmer.
Common Mistakes
- Cooking too fast or hot: high heat can toughen the meat. Low is gentler.
- Cutting with the grain: slicing along the fibers makes the meat stringy and chewy.
- Too little cooking: brisket needs time to soften; if it resists the fork, cook longer.
- Too much liquid or not rinsing: the result may be bland or salty respectively. Adjust to taste.
- Adding cabbage too early: it becomes mushy and waterlogged.
- Skipping the rest: let it sit 10 to 15 minutes before slicing.
Slicing and Serving
Find the direction of the grain and slice thinly across it. Serve with some cooking liquid spooned over, plus mustard, boiled potatoes and cabbage. A thin fat cap can be trimmed after cooking if you prefer.
Leftovers
Refrigerate within about two hours and use within three to four days; slices freeze well in some of the broth. Leftovers are great for sandwiches, hash or breakfast skillets. For another tender shredded beef, try Mississippi pot roast.
